Simple Thai Red Curry Shrimp

Ingredients

  • 2 cups cooked rice
  • 1 lb fresh shrimp
  • 1 stalk lemongrass
  • ¼-½ cup lime juice
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • 1 (14 ½ ounce) can diced tomatoes with juice
  • + 6 more ingredients
    • 1 (14 ounce) can unsweetened coconut milk
    • ¼ cup red curry paste
    • 2 tablespoons scallions, sliced
    • 2 tablespoons garlic, minced
    • 2 tablespoons fresh ginger, minced
    • 2 tablespoons peanut oil
