  • 1 green bell pepper, seeded and diced
  • 1 pound medium shrimp, peeled and deveined
  • Salt
  • 1 small onion, chopped
  • 4 slices thick-cut bacon, cut into 1/2-inch pieces (3 oz.)
  • 1 ½ teaspoons Old Bay seasoning
  • 3 cups low-sodium chicken broth
  • + 3 more ingredients
    • 1 (14.5 oz.) can diced tomatoes
    • 2 cups long-grain rice
    • 3 cloves garlic, chopped

Preheat oven to 375°F. Place bacon in a large ovenproof skillet and cook over medium heat until crisp, about 5 minutes. Transfer to a papertowel- lined plate to drain.
