Spiced Shrimp Skewers with Clementine Salsa

Ingredients

  • ¼ teaspoon ground ginger
  • 1 tablespoon fresh lime juice
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 36 jumbo shrimp (about 2 1/2 pounds), peeled and deveined
  • SHRIMP:
  • + 16 more ingredients
    • SALSA:
    • ¼ teaspoon salt
    • 2 serrano chiles, seeded and finely chopped
    • 2 teaspoons chopped fresh thyme
    • Cooking spray
    • 1 ½ cups chopped peeled jicama
    • Dash of ground nutmeg
    • 1 cup finely chopped red onion
    • 1/8 teaspoon ground red pepper
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon ground cumin
    • 6 cups clementine sections (about 6 clementines)
    • 1/8 teaspoon freshly ground black pepper
    • ¼ teaspoon ground coriander seeds
    • 1 tablespoon extra-virgin olive oil
    • 1 tablespoon minced peeled fresh ginger

To prepare shrimp, combine first 9 ingredients in a large bowl; stir well. Add shrimp, tossing well to coat. Cover and marinate in refrigerator 4 hours. Preheat grill or grill pan.
