Spicy Shrimp and Bell Pepper Stew with Cumin and Oregano
Ingredients
- 1 ½ pounds uncooked large shrimp, peeled, deveined
- 3 tablespoons fresh lime juice
- 6 garlic cloves, minced
- ¾ teaspoon dried oregano
- ¾ teaspoon ground cumin
- 3 tablespoons olive oil
- 2 cups chopped onions

- ½ red bell pepper, cut into matchstick-size strips (about ½ cup)
- ½ green bell pepper, cut into matchstick-size strips (about ½ cup)
- 4 tablespoons chopped fresh parsley
- ½ teaspoon dried crushed red pepper
- 1 bay leaf
- 2/3 cup tomato paste
- 1 1/3 cups dry white wine
- ¼ cup water
