Ingredients

  • 3 green onions, chopped
  • ½ medium-size green bell pepper, chopped
  • ½ teaspoon black pepper
  • 7 medium zucchini or yellow squash
  • 2 tablespoons butter
  • ¾ teaspoon salt
  • 1 large egg, lightly beaten
  • + 8 more ingredients
    • 3 garlic cloves, minced
    • ¼ teaspoon ground red pepper
    • 2 celery ribs, finely chopped
    • 1 ¼ cups fine, dry breadcrumbs, divided
    • 1 ¼ pounds peeled, medium-size raw shrimp (31/35 count)
    • ¼ cup chopped fresh parsley
    • ½ cup butter
    • 1 medium onion, finely chopped

1. Microwave squash at HIGH 3 minutes. Cut each in half lengthwise. Carefully scoop out pulp into a bowl, leaving a 1/4-inch-thick shell. Finely chop pulp. 2. Meanwhile, devein shrimp, if desired.
