Ingredients

  • ¼ tsp salt
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 2 tbsp grated fresh ginger
  • 2 cloves garlic , minced
  • 3 shallots , thinly sliced
  • 2 tbsp butter
  • + 6 more ingredients
    • 4 thick (½-inch/1 cm) slices cored peeled pineapple
    • 1 lb jumbo shrimp , (21 to 25 per lb), peeled and deveined
    • 1 tsp grated fresh ginger
    • 1 tbsp granulated sugar
    • 2 tbsp fish sauce
    • 2 tbsp lime juice

Coconut Rice: In saucepan, melt butter over medium heat; cook shallots, garlic and ginger, stirring occasionally, until softened, about 4 minutes.
