Whitemarsh Island Shrimp
Ingredients
- 1 ½ lb raw, large shrimp, peeled and deveined
- ¼ c butter
- ½ c olive oil
- 8 shallots, chopped very fine (about 3/4 cup)
- 4 garlic cloves, chopped fine
- 1 c stewed tomatoes
- ½ c fresh mushrooms, sliced
- + 4 more ingredients

- 1 t salt
- Dash pepper
- 1/3 c lemon juice
- ¼ c parsley, chopped
Butterfly shrimp. In hot butter and oil, saute shallots, mushrooms and garlic while stirring 3 minutes. Add tomatoes and cook, stirring 5 minutes longer. Add salt, pepper, lemon juice, 2 tablespoons parsley and shrimp. Toss to mix. Divide shrimp mixture into 6 individual baking dishes and broil 4...
