Whitemarsh Island Shrimp

Ingredients

  • 1 ½ lb raw, large shrimp, peeled and deveined
  • ¼ c butter
  • ½ c olive oil
  • 8 shallots, chopped very fine (about 3/4 cup)
  • 4 garlic cloves, chopped fine
  • 1 c stewed tomatoes
  • ½ c fresh mushrooms, sliced
  • + 4 more ingredients
    • 1 t salt
    • Dash pepper
    • 1/3 c lemon juice
    • ¼ c parsley, chopped

Butterfly shrimp. In hot butter and oil, saute shallots, mushrooms and garlic while stirring 3 minutes. Add tomatoes and cook, stirring 5 minutes longer.
