Shrimp is a delicate seafood but it is not always prepared in the most delicate of ways. Fried shrimp are ideally paired with simple, bright white wines like Albarino and Pinot Grigio, though there are many examples of shrimp dishes that can stand up to more intense wines. Shrimp scampi, with all that butter and garlic, can handle a rich white wine like Chardonnay, but some bitter-edged Italian whites can work splendidly with scampi as well. These include Fiano di Avellino, Verdicchio, and Vernaccia di San Gimignano. Another option is to enjoy the dish with a bright, young zesty white like Orvieto.

 

Other common shrimp preparations include robust tomato sauce, where a light and fresh Chianti might be the best choice, and Paella, where a young Rioja is the ideal pairing. Both of these cases abide by the rule of drinking local wines with local dishes. Many rich dishes from the American South like Gumbo and Jambalaya offer similar pairing opportunities where the basic rules apply perfectly. Gumbo can easily be paired with white Rhone blends, whose richness and slightly savory flavors are mirrored by the dish. On the other hand, Jambalaya has a bit of a kick and smoky edge, making light, fruity red wines a natural match. The spice of the dish is mellowed by the fruit of the wine, and the smoke serves to accentuate the fruit much like barrel aging can.
