Ingredients

  • ½ pound ground boiled ham
  • 1 cup raisins
  • 1/3 cup balsamic vinegar
  • ½ cup honey
  • Garnishes: fresh parsley sprigs, kumquat leaves, kumquats
  • 1 ½ cups sweet vermouth
  • 1 ½ cups chopped onion, divided
  • + 16 more ingredients
    • 1 cup chopped apple
    • 1 teaspoon pepper
    • 1 cup milk
    • 1 pound ground veal
    • ½ cup chopped walnuts
    • 1 (10- to 12-pound) turkey
    • 2 tablespoons salt
    • 6 white bread slices
    • 1 tablespoon Cajun seasoning
    • ½ cup minced fresh parsley
    • 1 large egg, lightly beaten
    • 1 tablespoon minced garlic
    • 2 tablespoons olive oil
    • 1 tablespoon pepper
    • 2/3 cup butter or margarine
    • 1 teaspoon salt

Remove giblets and neck from turkey, and reserve for another use. Rinse turkey with cold water, and pat dry. Place turkey in a shallow dish.
