  • 4 1/4-inch-thick turkey cutlets
  • ¼ teaspoon orange zest
  • 1 cup dry bread crumbs
  • ½ teaspoon salt
  • 1 cup cranberry juice
  • 2 tablespoons cider vinegar
  • vegetable oil
