  • 2 ½ pounds 1/4-inch-thick turkey cutlets
  • or sour dill pickles
  • Tahini Sauce
  • 1 teaspoon freshly ground black pepper
  • 1 cup pickled eggplant*
  • 1 teaspoon ground white pepper
  • 1 tablespoon turmeric

    • 2 teaspoons coarse kosher salt
    • 8 whole pita breads
    • 8 tablespoons (about) extra-virgin olive oil
