Wild Rice, Apple, and Dried-Cranberry Stuffing

Ingredients

  • 2 cups celery
  • ½ teaspoon black pepper
  • 10 tablespoons unsalted butter
  • 4 cups water
  • 1 cup dried cranberries
  • 1 teaspoon fresh thyme
  • 2 cups onion

    • 1 cup turkey stock or chicken broth
    • 1 ½ teaspoons salt
    • 1 cup wild rice
    • 2 tablespoons fresh sage
    • ½ pound crusty white bread
    • ¼ cup fresh flat-leaf parsley
    • 2 cups apple
