  • 1 (15- to 18-pound) fresh turkey
  • For the turkey::
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons hot paprika
  • 2 teaspoons filé powder
  • 6 tablespoons kosher salt
  • + 3 more ingredients
    • 6 tablespoons dry mustard, such as "Colman's":
    • ½ cup packed dark brown sugar
    • For the rub::
