Spaghetti with Smoked Turkey and Leeks
Ingredients
- 3 large leeks, white and light-green parts only, split lengthwise, cut crosswise into thin slices, and washed well, or 12 scallions including green tops, sliced
- ½ pound smoked turkey, sliced about 1/8-inch thick and cut into 1/4-by-1 1/2-inch strips
- 1 teaspoon salt
- 2 tablespoons chopped parsley
- 1 tablespoon butter
- ¼ teaspoon fresh-ground black pepper
- 1 cup heavy cream
