Alicante Turkey Meatballs
Ingredients
- ½ cup fresh flat-leaf parsley leaves
- 2 (1-ounce) slices country white bread, torn into small pieces
- 1 garlic clove
- 1/3 cup fat-free milk
- 1 tablespoon pine nuts, coarsely chopped
- ¼ teaspoon salt
- 4 ounces ground turkey

- ½ turkey or chicken liver, minced (about 1 tablespoon)

- 2 celery stalks, cut diagonally into 1-inch pieces
1. Combine first 3 ingredients in a food processor; process until coarsely ground. Combine breadcrumb mixture and milk in a medium bowl; let stand 5 minutes.
