Alicante Turkey Meatballs

Ingredients

  • ½ cup fresh flat-leaf parsley leaves
  • 2 (1-ounce) slices country white bread, torn into small pieces
  • 1 garlic clove
  • 1/3 cup fat-free milk
  • 1 tablespoon pine nuts, coarsely chopped
  • ¼ teaspoon salt
  • 4 ounces ground turkey
  • + 5 more ingredients
    • 4 ounces ground pork
    • ½ turkey or chicken liver, minced (about 1 tablespoon)
    • 2 teaspoons olive oil

    • 2 celery stalks, cut diagonally into 1-inch pieces

1. Combine first 3 ingredients in a food processor; process until coarsely ground. Combine breadcrumb mixture and milk in a medium bowl; let stand 5 minutes.
