Ingredients

  • 1 cup apple cider or juice
  • 1 onion (about 8 oz.), peeled and chopped
  • 1 teaspoon minced garlic
  • ¼ cup dry white wine
  • Pepper

  • 2 pounds thin-skinned potatoes, peeled and cut into 1/2-inch chunks

    • 3 to 4 tablespoons crumbled blue cheese (about 1 1/2 oz.)

    • ¼ teaspoon ground nutmeg
    • 1 teaspoon olive oil

    • 2 slices turkey bacon (1 oz. total), chopped
    • ¾ cup low-fat (1%) milk
    • 1 tart apple (about 8 oz.), such as Fuji, peeled, cored, and sliced
