Green Bean Salad


  • 8 ounces green beans
  • 8 ounces yellow wax beans
  • 4 ounces crumbled blue cheese (or goat cheese)
  • ¼ cup dried cranberries
  • ¼ cup candied walnuts
  • 1 tablespoon minced chives
  • 6 slices cooked turkey bacon, cut into ¼-inch pieces

    • 1 tablespoon Dijon mustard
    • 1 tablespoon white wine vinegar or champagne vinegar
    • 1 shallot, minced
    • 3 tablespoons extra-virgin olive oil
    • Salt and freshly ground black pepper
