Leftover Turkey Recipe: Turkey Gumbo


  • cooked rice
  • small handful fresh parsley, chopped
  • salt and pepper to taste
  • 2 cups cooked, shredded leftover turkey
  • 2-3 cups frozen or fresh okra
  • 8 cups water
  • 1 quart chicken or vegetable broth
  • + 10 more ingredients
    • 1 pound kielbasa, smoked or polish sausage, cut into bite-sized pieces
    • One 14-ounce can diced tomatoes
    • ½ teaspoon each: dried oregano, dried thyme
    • 2 bay leaves
    • 5 cloves garlic, minced
    • 1 onion, diced
    • 2 stalks celery, diced
    • 2 bell peppers, diced
    • 6 tablespoons all-purpose flour
    • 4 tablespoons butter

Heat a large stockpot with the butter over medium heat. When the butter begins to bubble a bit, use a whisk or wooden spoon to add in the flour, a little at a time.
