Orange-Wild Rice Salad with Smoked Turkey

  • ½ teaspoon salt
  • ¼ cup thawed orange juice concentrate, undiluted
  • 1 cup uncooked wild rice
  • 6 cups water
  • 2 tablespoons fresh lemon juice
  • ½ pound smoked turkey breast, diced
  • ¼ teaspoon freshly ground black pepper
  • + 6 more ingredients
    • 2 tablespoons water
    • 1 tablespoon Dijon mustard
    • 1 cup orange sections (about 4 oranges)
    • 1 ½ teaspoons olive oil
    • ½ cup diced celery
    • 1/3 cup dried sweet cherries or sweetened dried cranberries (such as Craisins)

Bring water to a boil in a medium saucepan; stir in rice. Partially cover, reduce heat, and simmer 1 hour or until tender. Drain; cool. Place rice, oranges, celery, cherries, and turkey in a bowl.
