Parm, Olive & Pepperoni Pasta Salad

Ingredients

  • ½ teaspoon Dijon mustard
  • 2 tablespoons minced Italian parsley
  • 2 cloves garlic, minced
  • 2 oz red wine vinegar
  • 2 oz olive oil
  • 10 pimento stuffed green olives, sliced
  • ¼ cup diced red onion
  • + 6 more ingredients
    • 1 large cubanelle pepper, diced
    • 2 ½ oz turkey pepperoni, sliced
    • ½ English cucumber, diced
    • 8 oz rotini
    • for the dressing:
    • 3 tablespoons grated Parmesan

Prepare pasta according to package instructions. Drain and allow to cool. Place the pasta and the remaining salad ingredients in a large bowl and toss.
