Pasta Jambalaya


  • ½ cup diced onion
  • 1 garlic clove, minced
  • ½ cup diced red bell pepper
  • Cooking spray
  • 7 cups hot cooked penne (about 3 cups uncooked tube-shaped pasta)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can diced tomatoes and green chiles, undrained

    • ½ cup (2 ounces) preshredded 4-cheese Mexican recipe blend cheese (such as Sargento)
    • 1 teaspoon Cajun seasoning
    • 3 ounces turkey kielbasa, halved lengthwise and thinly sliced
