Thai Curry Turkey Burgers

Ingredients
- Sliced tomato, for serving
- Kosher salt and freshly ground black pepper
- 4 sesame seed hamburger buns
- 1-¼ lb. ground turkey (not ground turkey breast)
- 2 Tbs. red or green Thai curry paste
- 2/3 cup mayonnaise
- 1 Tbs. seasoned rice vinegar

- ¼ cup fresh cilantro leaves
- ¾ cup thinly sliced seedless cucumber
- 1 medium lime
- Vegetable oil, for the grill
- 1 small shallot, thinly sliced
