Ingredients

  • 2 tablespoons brown sugar
  • Lime wedges, for serving
  • 2 cups uncooked jasmine rice
  • ¾ cup frozen green peas
  • ¼ cup thinly sliced red bell pepper strips
  • 1 ½ cups cubed peeled butternut squash (or leftover sweet potato)
  • ¼ cup fat-free, less-sodium chicken broth or water
  • + 7 more ingredients
    • ¼ cup cilantro sprigs
    • 1 cup light coconut milk
    • 2 cups chopped cooked turkey breast
    • 3 cups water
    • 1 teaspoon green curry paste
    • 1 tablespoon fish sauce, plus more for serving
    • ½ teaspoon kosher salt, divided

1. Combine rice, 3 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, reduce heat, and simmer, covered, 15-20 minutes or until all the water has been absorbed.
