Turkey Cutlet Fricassee

Ingredients

  • 4 (4-ounce) skinless turkey breast cutlets
  • 1/8 t pepper
  • 1 ½ c water
  • 1 1/3 c diagonally sliced carrots
  • 1 c coarsely chopped onion
  • 1 c frozen whole kernel corn
  • 8 oz sliced fresh mushrooms
  • + 9 more ingredients
    • ¼ c chablis or other dry white wine (optional)
    • ½ t chicken bouillon granules
    • ½ t whole tarragon
    • ½ t whole thyme
    • 1 bay leaf
    • ½ c evaporated skim milk
    • 2 T cornstarch
    • 1 t lemon juice
    • Fresh tarragon springs (optional)

Rinse the turkey and pat dry. Sprinkle the cutlets with the pepper. Spray a large heavy saucepan with nonstick cooking spray. Heat over medium-high heat until hot.
