Turkey Cutlet Fricassee
Ingredients
- 4 (4-ounce) skinless turkey breast cutlets
- 1/8 t pepper
- 1 ½ c water
- 1 1/3 c diagonally sliced carrots
- 1 c coarsely chopped onion
- 1 c frozen whole kernel corn
- 8 oz sliced fresh mushrooms

- ½ t chicken bouillon granules
- ½ t whole tarragon
- ½ t whole thyme
- 1 bay leaf
- ½ c evaporated skim milk
- 2 T cornstarch
- 1 t lemon juice
- Fresh tarragon springs (optional)
Rinse the turkey and pat dry. Sprinkle the cutlets with the pepper. Spray a large heavy saucepan with nonstick cooking spray. Heat over medium-high heat until hot.
