  • 1/8 teaspoon salt
  • 1 ½ ounces prosciutto, julienned
  • 1/3 cup dry white wine
  • 1 tablespoon olive oil
  • 4 (4-ounce) turkey breast cutlets
  • 3 tablespoons finely chopped shallots
  • 2 teaspoons finely chopped fresh sage

Place each cutlet between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle both sides of each cutlet with salt and pepper.
