Turkey, Rice and Mushroom Soup

Ingredients

  • 2 cups diced, cooked turkey
  • 6 cups turkey broth (see instructions below)1 cup long grain and wild rice blend (unseasoned)
  • 1 ounce dried shiitake mushrooms
  • 2 tablespoons oil
  • ½ cup onion, finely chopped
  • 2 cloves garlic, very finely chopped
  • 8 ounces cremini (or white) mushrooms, sliced
  • + 4 more ingredients
    • 1 tablespoon soy sauce
    • 1 to 2 tablespoons fresh thyme leaves
    • 2 tablespoons cream
    • Salt and freshly ground black pepper

Preparation: Place the turkey broth in a saucepan and bring to a simmer over medium heat.
