Turkey Scallopine a la Piccata

Ingredients

  • 1 tablespoon chopped parsley leaves
  • 2 tablespoons capers, drained
  • 1 lemon, juiced, or more to taste (about 2 tablespoons)
  • 1 garlic clove, minced
  • ½ cup chicken stock
  • 1 cup dry white wine
  • 5 tablespoons butter
  • + 5 more ingredients
    • 1 ½ tablespoons vegetable oil
    • 4 slices (¼-inch sliced turkey breast), about ¾ pound, pounded to a thickness of 1/8-inch
    • ½ teaspoon freshly ground white pepper
    • 2 teaspoons salt
    • ½ cup all-purpose flour
