Two-Bean Turkey Chili

Ingredients

  • 1 cup chicken or turkey broth
  • 2 tablespoon fine cornmeal
  • ½ teaspoon cracked black peppercorns
  • 2 teaspoon dried oregano
  • 1 can (4 1/2 oz or 127 mL) diced mild green chiles
  • 1 tablespoon oil
  • 4 cups cooked pinto beans (see tips)
  • + 12 more ingredients
    • 1 jalapeño pepper or chipotle pepper in adobo sauce
    • 2 pounds skinless boneless turkey breast
    • 1 tablespoon ground cumin
    • 6 cloves garlic
    • 2 onions
    • 1 red bell pepper
    • 2 stalks celery
    • 1 lime
    • 1 green bell pepper
    • 1 tablespoon New Mexico or ancho chile powder
    • 2 cups frozen sliced green beans
    • 1 can (28 oz/796 mL) tomatoes with juice

1. In a skillet, heat oil over medium heat. Add onions and celery and cook, stirring, until celery is softened, about 5 minutes. Add garlic and cook, stirring, for 1 minute.
