Wine-smoked Turkey

  • Sprigs of fresh sage and marjoram
  • 3 tablespoons olive oil
  • 4 to 6 cups wine-infused wood chips* or shavings, lightly packed
  • 1 medium onion
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons minced fresh marjoram leaves or 1/2 tsp. dried marjoram
  • 1 tablespoon minced parsley
  • + 3 more ingredients
    • 2 tablespoons minced fresh sage leaves or 2 tsp. dried sage
    • 1 Golden Delicious apple
    • 1 turkey (16 to 18 lbs.)
