Ingredients

  • 1 tablespoon mirin
  • 3 sprigs rosemary
  • 1 medium onion
  • 1 ½ tablespoons freshly ground black pepper
  • 6 tablespoons unsalted butter
  • 2 celery stalks
  • 3 tablespoons reduced-sodium soy sauce
  • + 2 more ingredients
    • 1 12-14-pound turkey
    • 3 tablespoons kosher salt (optional)

Preheat oven to 450°F. Set a rack inside a large roasting pan. Pour 4 cups water into pan. Pat turkey dry with paper towels. Tuck tips of wings under bird.
