  • ¼ tsp. kosher salt

  • Olive oil as needed
  • ½ cup unsalted butter, at room temperature
  • One 14-lb. fresh, natural turkey; giblets removed and reserved
  • ¼ cup granulated sugar
  • ¼ tsp. freshly ground black pepper
  • + 2 more ingredients
    • 2 Tbs. chopped fresh sage
    • 1 cup kosher salt
