  • 1 ½ cups fat-skimmed chicken broth
  • 1 cup kosher salt
  • 1 tablespoon melted butter
  • ¼ cup frozen cranberry juice concentrate
  • Salt and pepper
  • About 1 tablespoon lemon juice
  • 1 cup sugar
  • + 1 more ingredients
    • 1 bone-in turkey breast (5 to 6 lb.; see notes)

1. In a large bowl or pan (at least 8 qt.), combine 4 quarts water, kosher salt, and 3/4 cup sugar. Stir until salt and sugar are dissolved.
