Ingredients

  • 1 cup lower-salt chicken or turkey broth, more as needed
  • ¼ tsp. finely chopped sage leaves
  • 1 medium head garlic, separated into cloves and peeled
  • 1 dried bay leaf
  • ½ tsp. finely chopped rosemary leaves
  • Freshly ground pepper
  • 1 16- to 18-lb. turkey (preferably fresh)
  • + 14 more ingredients
    • Freshly ground black pepper
    • 2 medium carrots, chopped
    • 4 medium shallots, chopped
    • 1 Tbs. finely chopped fresh thyme
    • 4 sprigs fresh rosemary (6 to 7 inches long)
    • 2 large celery stalks, chopped
    • 1 tsp. finely chopped thyme leaves
    • Sea salt
    • 4 sprigs fresh sage (7 to 8 inches long)
    • 1 Tbs. unsalted butter
    • ½ medium lemon
    • Kosher salt
    • 4 oz. (½ cup) unsalted butter, softened
    • 5 Tbs. all-purpose flour
