Cider-Glazed Turkey
Ingredients

- 1 cup water
- About 4 cups hot turkey giblet stock
- 1/3 cup all-purpose flour
- Melted unsalted butter if necessary
- 2 cups dry white wine
- a 17- by 14-inch flameproof roasting pan with a flat rack;
