Ingredients

  • 2 medium ribs celery, cut into 1-inch chunks
  • ¼ cup kosher salt
  • 2 medium carrots, unpeeled and cut into 1-inch chunks
  • 2 medium to large yellow onions, unpeeled and cut into eighths
  • One 10- to 12-lb. turkey
