Ingredients

  • 1/3 cup all-purpose flour
  • 5 cups Homemade Turkey Stock, divided
  • 2 tablespoons cornstarch
  • 1 cup coarsely chopped celery
  • 2 cups coarsely chopped onion
  • Cooking spray
  • 2 tablespoons butter, melted
  • + 5 more ingredients
    • 2 tablespoons chopped fresh rosemary, divided
    • 1 (12-pound) fresh or frozen turkey, thawed
    • ¾ teaspoon black pepper, divided
    • ¼ cup water
    • 1 ¾ teaspoons salt, divided

Preheat oven to 325°. Remove neck, heart, gizzard, and liver from turkey. Reserve neck, heart, and gizzard for Homemade Turkey Stock; discard liver. Rinse turkey thoroughly with cold water; pat dry.
