Ingredients

  • 2 teaspoons Sherry vinegar
  • 1 large onion
  • 2 tablespoons fennel seeds
  • 1 tablespoon coarse kosher salt
  • 3 medium carrots
  • Coarse kosher salt
  • 2 to 3 cups low-salt chicken broth
