Lemon-Sage Turkey with Wild-Mushroom Gravy

Ingredients

  • 3 tablespoons grated lemon rind
  • 2 tablespoons dried rubbed sage
  • ¼ cup fresh lemon juice
  • 1 teaspoon salt
  • 1 (12-pound) fresh or frozen turkey, thawed
  • 1 tablespoon cracked black pepper
  • 3 tablespoons dried thyme
  • + 3 more ingredients
    • 2 (16-ounce) cans fat-free, less-sodium chicken broth

    • Cooking spray

Combine first 6 ingredients; set aside. Remove and discard giblets from turkey, reserving neck for gravy. Rinse turkey with cold water; pat dry. Trim excess fat.
