  • 2 tablespoons olive oil

    • 3 cups Shortcut Turkey Stock
    • 2 tablespoons olive oil
    • 1 14- to 16-pound turkey, neck, heart, and gizzard reserved
    • 4 ounces thinly sliced pancetta (Italian bacon)
    • 4 fresh rosemary sprigs
    • 1 teaspoon fresh rosemary
