  • 1 (13-pound) fresh or frozen turkey, thawed
  • 1 teaspoon salt, divided
  • 1/3 cup (1 1/2 ounces) grated fresh Parmigiano-Reggiano cheese
  • 1 lemon, halved
  • 10 garlic cloves
  • ½ teaspoon freshly ground black pepper, divided
  • 1 cup chopped celery
  • + 11 more ingredients
    • 5 tablespoons chopped fresh sage, divided
    • 1 tablespoon minced garlic
    • 1 cup chopped carrot
    • 3 cups chopped onion
    • 2 ½ cups fat-free, less-sodium chicken broth, divided
    • ¼ cup all-purpose flour (about 1 ounce)
    • ¼ cup water
    • 2 tablespoons butter, softened
    • Cooking spray
    • 1 cup sherry
    • 1/3 cup chopped shallots
