Prosciutto-wrapped Turkey Breast with Fontina and Sage

Ingredients

  • 1 tablespoon finely chopped fresh sage leaves or 1 teaspoon dried rubbed sage
  • Garlic oil (recipe follows)
  • 1 cup shredded fontina cheese (about 4 oz.)
  • 3 ounces thin-sliced prosciutto
  • Fresh sage sprigs (optional), rinsed
  • ¼ cup grated parmesan cheese
  • 1 boned turkey breast half (about 1 3/4 lb.), skinned (see notes)
