Roast Turkey with Herbed Bread Stuffing and Giblet Gravy

Ingredients

  • 12- to 14-pounds kosher turkey, feathers removed, neck and giblets (excluding liver) reserved
  • 4 cups turkey giblet stock
  • ¼ cup water
  • Pan juices reserved from turkey
  • ¼ cup all-purpose flour
  • fresh sage sprigs
  • fresh rosemary sprigs
  • + 4 more ingredients
    • ¾ stick unsalted butter
    • fresh thyme sprigs
    • ¼ cup chicken broth
    • Herbed bread stuffing

Make turkey giblet stock and herbed bread stuffing. Preheat oven to 425°F. Rinse turkey inside and out and pat dry. Season with salt and pepper inside and out.
