Roast Turkey with Truffle Gravy
Ingredients
- 1 ½ teaspoons truffle oil
- 2 tablespoons butter, softened
- 4 cups water
- ½ teaspoon kosher salt
- 1/3 cup chopped carrot
- 4 thyme sprigs
- 4 parsley sprigs

- 1 (12-pound) fresh or frozen turkey, thawed
- 3 ½ tablespoons all-purpose flour
- Turkey:
- 1 bay leaf
- 1 ½ teaspoons kosher salt
- 4 sage leaves
- 1 medium onion, quartered
- 6 black peppercorns
- Gravy:
- 1 cup water
- ½ teaspoon freshly ground black pepper
- 1/3 cup chopped celery
- ¾ teaspoon freshly ground black pepper
- 2 thyme sprigs
- Cooking spray
- 4 garlic cloves
- 2/3 cup chopped onion
Preheat oven to 500°. To prepare the turkey, remove giblets and neck from turkey; reserve for gravy. Trim excess fat. Stuff body cavity with 4 thyme sprigs, sage leaves, garlic, and medium onion.
