Simple Roast Turkey with Rich Turkey Gravy

Ingredients

  • ¾ cup all-purpose flour
  • 1 2-qt glass measuring cup
  • 1 instant-read thermometer
  • 2 small metal skewers
  • 2 tablespoons cider vinegar
  • ½ cup unsalted butter
  • 2 cups water
  • + 6 more ingredients
    • 1 17- by 14-inch flameproof roasting pan with a flat rack

    • 1 ¾ teaspoons black pepper
    • 1 tablespoon salt
    • 1 16-lb turkey, neck and giblets removed
