  • 8 cups turkey stock
  • 1 ¾ teaspoons black pepper
  • ½ cup unsalted butter
  • 1 instant-read thermometer
  • ¾ cup all-purpose flour

    • 1 17- by 14-inch flameproof roasting pan with a flat rack
