Tunisian-Spiced Turkey with Garlic Couscous and Harissa Gravy

Ingredients

  • 2 ½ cups uncooked couscous
  • 1 ½ tablespoons black peppercorns
  • ¾ cup plain low-fat yogurt
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 (14-ounce) cans fat-free, less-sodium chicken broth
  • 2 teaspoons crushed red pepper
  • + 27 more ingredients
    • 8 garlic cloves, crushed
    • 1 teaspoon caraway seeds
    • ½ teaspoon salt
    • 2 red jalapeño or Fresno peppers, seeded and chopped
    • 1 tablespoon olive oil
    • Turkey:
    • ½ cup dried currants
    • 2 tablespoons cornstarch
    • 1 (12-pound) fresh or frozen turkey, thawed
    • Cooking spray
    • ¼ cup chopped fresh flat-leaf parsley
    • Couscous:
    • 1/3 cup water
    • 1 tablespoon olive oil
    • 2 (14-ounce) cans fat-free, less-sodium chicken broth
    • 2 teaspoons coriander seeds
    • 1 cup water
    • Gravy:
    • 1 teaspoon cumin seeds
    • ¼ teaspoon freshly ground black pepper
    • 1 ½ teaspoons ground cinnamon
    • ½ teaspoon salt
    • 2 garlic cloves, minced
    • ¼ cup chopped fresh cilantro
    • 1 tablespoon whole cloves
    • ½ teaspoon ground nutmeg
    • 1 tablespoon cardamom pods

Preheat oven to 400°. To prepare turkey, place first 3 ingredients in a small skillet, and cook over medium-low heat 2 minutes or until toasted and fragrant, shaking pan frequently.
