    • 1 ¼ cups apple cider (preferably unfiltered)
    • 5 tablespoons unsalted butter
    • ½ cup celery
    • ½ cup water
    • 1/3 cup soy sauce
    • ½ pound chicken livers, trimmed
    • 1 teaspoon garlic
    • 1 Turkish or 1/2 California bay leaf
