  • 2 tablespoons molasses
  • 1 10- to 12-pound turkey
  • 2 teaspoons fresh lemon juice
  • ¼ cup kosher salt
  • 10 tablespoons unsalted butter, at room temperature
  • ¼ cup coarsely ground black pepper
